BROKEN PRAWNS
Time required: 35 minutes
Ingredients:
- 12 prawns
- 2 tablespoons of white flour fry oil
- 1 spring onion
- 8 slices of fresh ginger
- 1 teaspoon of salt
- 1 pinch of monosodium glutamate
- (optional)
- 1 tablespoon Shão Xing lão ji Chinese
- wine 1 teaspoon sesame oil
Procedure:
- Remove the antennae and legs from the prawns, score them along the back to remove the innards and cut them in half. Wash them, dry them, roll them in flour.
- Heat 2 tablespoons of oil in the wok and sautè the prawn halves until they are golden brown; place them on absorbent paper and keep them warm.
- Cut spring onion and ginger into strips; put a little oil back into the wok and saute the aforementioned strips until they give off the
- characteristic scent; then add salt, glutamate, wine, sesame oil to the wok, then put the prawns back in, mix and reduce for a couple of minutes over moderate heat.
