Marinated Smoked Herring in Olive Oil
Boiled potato with marinated smoked herring is a dish that combines tender boiled potatoes with flavorful smoked herring that has been marinated in various spices and seasonings. It's a popular dish in some regions, known for its savory and slightly salty taste.
A kipper is a whole herring, a small, oily fish that has been split in a butterfly fashion from tail to head along the dorsal ridge, gutted, salted or pickled, and cold-smoked over smouldering wood chip.

Ingredients:
- 1 pouch mild smoked herring
- 1 onion
- 1 carrot
- Olive oil
- 1 branch thyme
- 2 bay leaves
- Red whole pepper
- 1 tsp coriander seed
Preparations:
1. Cut the herring fillets into 2 or 3 pieces, then place them in a box
2. Add the carrots cut into thin disc, minced onions and the rest of the spices
3. Cover with oil, everything should be submerged and cover the container
4. Leave the marinate for at least 3 days, the older the better.
